I only encourage their passion to fly. You can see it in there eyes, run with it, encourage it, nurture it. Never berate it, trash it, or destroy it. Be enthusiastic, yet stay real. Dont lie or embelish, and most of all dont hold back the true details when they ask. Ie, dont let them think FAA mins are all it cost.

They got me with a picture posted at my college of two half naked chicks kissing a guy dressed like an airline pilot standing next to an Astar. The caption read: "Up Up and Away, She'll Love Ya for It!". How was I to know it was an ad for Viagra?

Not the way my instructor described his heli-career.

So what are all the flight instructors doing to get students in the door? What type of marketing and sales are you using to find new students and retain old students?

Didn’t the school that provided your CFI training teach you what, and how, to do that?

"You have the GI bill? Then your training is free and you can be a helicopter pilot! Sign here and let's do all your training in Astars and Bells!"

"What? After two years you have your ratings and 200 hours and nobody will hire you because there aren't any jobs for your skills and hours? Well sorry to hear it, good luck out there, thanks for the 200 grand! There's the door."

Disclaimer: not my school but I can think of a couple along these routes...

Well I been in the profession both fixed and rotor wing for going on 42 years now and when I was young it was known that 70% of the Students that start training will drop out, why that is its anybodies guess, I heard a number of reasons enough to write a book or a good long article in Flying or any number of publications! This comes up in poor economic times, I have seen it before. The costs have gotten out of hand in learning how to fly its that simple in my opinion and there is little reason to learn how to fly, helicopters well if you are not planning to fly professionally, there is no real reason to bother unless you want bragging rights on Friday night at the local watering holes, fixed wing is not a whole lot better either from a Private Pilots point of view, you really got to be well healed to fund and play in this game- all you have to do is look at the real costs, then its not unreasonable to see why the drop out rate is so high, but that aside is how many of the ones that to get a certificate and a rating either fixed or rotor are still flying or even current five years after the fact? Student starts are at an all time low these days and for the flight instructor its especially tough from that point of view because you are all trying to drink from a very small pool And the pool is not being refilled! Tough time to be a CFI or a working pilot for that matter!
